Garlic roast beef

5000 g,  rib of beef

10  galic cloves, minced

2 tbsp,  olive oil

2 tsp,  salt

2 tsp,  ground black pepper

2 tsp,  dried thyme


  1. Preheat the oven to 260 C / Gas 9.
  2. In a roasting tin, place the joint with the fleshy side up. In a small bowl, mix the garlic, olive oil, salt, pepper and thyme. Spread the mixture over the fleshy layer of the joint, and leave it aside for 1 hour at room temperature, to allow the mixture to settle down.
  3. Place the joint in preheated oven and roast for 20 minutes. Then reduce the temperature to 160 C / Gas 3, and continue roasting for an additional 60 to 75 minutes. The internal temperature of the roast should be at 55 degrees C for medium rare.
  4. Allow the roast to rest for 10 or 15 minutes before taking it out, so the meat can retain its juices.
