Blueberry Walnut Bread

Originaly Yeild:

4 servings




50 ml,  margarine, softened

100 ml,  milk

2  eggs

450 g,  all-purpose flour

250 g,  white sugar

2.50 tsp,  baking powder

0.50 tsp,  baking soda

1 tsp,  salt

150 g,  frozen blueberries, thawed, drained

50 g,  chopped walnuts

0.50 tsp,  grated lemon zest (optional)


  1. In a large bowl used for making breads, beat together the margarine, milk, eggs and sugar. Add the flour, baking powder, baking soda and salt and stir constantly.
  2. Carefully fold in the blueberries, walnuts and lemon zest.
  3. Meanwhile, grease the bread machine pan with cooking spray. Pour mixture into bread machine pan and put pan into bread machine. Select Quick Bread/Cake cycle, and press Start.
  4. Check in 1 minute to see if mixture is well blended. Cook until cake cycle stops. Cool completely in bread machine pan before removing.
