Cheesy Onion Focaccia

4 servings




250 ml,  hot water

2 tbsp,  olive oil

1 tsp,  salt

250 g,  bread flour

1 tbsp,  sugar

1.50 tsp,  active dry yeast

150 g,  onions, quartered and sliced

75 g,  cloves, minced

20 g,  butter

2 tsp,  Italian seasoning

50 g,  shredded Cheddar cheese

2 tbsp,  grated parmesan cheese


  1. In a bread machine pan, place the first six ingredients in the same order and process the ingredients as suggested by the manufacturer. Check the dough after 5 minutes of processing; check the consistency and add 1 to 2 tablespoons of water or flour if needed.
  2. When the dough comes to a good consistency, turn dough onto a lightly greased 12-inch. pizza pan; pat into a 10-in. circle. Cover the dough and allow it to rise in a warm place until doubled. You can leave it for about 30 minutes.
  3. Meanwhile, in a large skillet, melt butter and saute onions and garlic for 18-20 minutes or until it turns golden brown. Sprinkle the Italian seasoning and cook the whole mixture for 1 minute longer.
  4. Using the end of a wooden spoon handle, make deep indentations 1 in. apart in dough. Top the indentations with onion mixture and cheeses.
  5. Bake at 400 degrees F for 15-18 minutes or until golden brown. Serve warm.
