Blueberry Cheesecake

295 ml,  vanilla wafer crumbs

30 ml,  sugar

45 ml,  margarine or butter, melted

225 g,  cream cheese, softened

235 ml,  sugar

30 ml,  grated lemon peel

1 ml,  vanilla

3 medium,  eggs

595 g,  blueberry filling


  1. Mix wafer crumbs, 2 Tbsp. (30 ml) sugar and margarine. Press in bottom of 9 inch (20 cm) springform pan or 9 inch (20 cm) pie pan.
  2. Bake 10 minutes at 350° (175° C). Cool.
  3. Beat cream cheese in large bowl. Add 1 cup (235 ml) sugar gradually, beating until fluffy. Add lemon peel and vanilla.
  4. Beat in one egg at a time. Pour over crumb mixture.
  5. Bake at 300° (150° C) for 1 hour or until center is firm.
  6. Refrigerate at least 3 hours.
  7. Top with pie filling.
