Ingredients:

200 g,  Plain flour

0.50 tsp,  Salt

2 tsp,  Baking Powder

110 g,  Butter

200 g,  Caster sugar

2  Eggs

1 tsp,  Vanilla extract

175 ml,  Milk

Preparation:

  1. Preheat oven to 180 C / Gas 4. Grease one baking tin of size 20cm square. Line bottom with greaseproof paper or sprinkle lightly with flour.
  2. Sift together the flour, salt and baking powder.
  3. In a large bowl, combine the butter and caster sugar and beat well. Add eggs and vanilla, beat until light and fluffy. Add the sifted dry ingredients to the creamed mixture alternately with the milk. Stir until just blended. Pour cake mixture into prepared tin.
  4. Bake at 180 C / Gas 4 for 50 to 55 minutes or until cake springs back when lightly touched.
