Carrot banana cake

Originaly Yeild:

4 servings




5 tbsp,  olive oil

125 g,  sugar

2  eggs

250 g,  plain flour

1 tsp,  bicarbonate of soda

0.50 tsp,  salt

1 tsp,  ground cinnamon

150 g,  mashed ripe bananas

120 g,  grated carrots

50 g,  chopped walnuts (optional)


  1. Preheat the oven to 180 C / Gas 4.
  2. Grease a large tin of size 900g loaf tin.
  3. In a bowl, place oil and sugar and mix well.
  4. Add eggs and beat well. Combine flour, bicarb, salt and cinnamon; gradually add to the oil and egg mixture alternately with bananas.
  5. Stir in carrots and nuts, if you use these in your cake.
  6. Place the batter into the greased tin and bake for 55-65 minutes or until a wooden pick inserted in the centre comes out clean.
  7. Cool for 10 minutes before removing from tin to a wire rack to cool completely.
