Carrot Cake with Wholemeal Flour

Ingredients:

240 g,  wholemeal flour

1 tbsp,  baking powder

2 tbsp,  bicarbonate of soda

2 tbsp,  ground cinnamon

1 tsp,  salt

110 g,  wheat germ

350 g,  caster sugar

225 ml,  vegetable oil

3  eggs

1 tbsp,  vanilla extract

225 g,  grated carrots

120 g,  chopped walnuts

100 g,  desiccated coconut

227 g,  pineapple, drained and pureed

Preparation:

  1. Preheat oven to 180 C / Gas 4. Grease and flour a 20x30cm baking dish or tin.
  2. In a large bowl, sieve together the wholemeal flour, baking powder, bicarbonate of soda.
  3. Add cinnamon and salt to the sieved flour. Stir in the wheat germ.
  4. Make a well in the centre of the flour and add sugar, oil, eggs and vanilla. Mix well, and then stir in carrots, nuts, coconut and pineapple.
  5. Spread the batter into the greased tin or dish. Bake in preheated oven for 45 minutes, or until the centre springs back when lightly tapped.
