Chewy Coconut Cookies

150 g,  plain flour

0.50 tsp,  bicarbonate of soda

0.25 tsp,  salt

110 g,  butter

110 g,  soft brown sugar

100 g,  caster sugar

1  egg

0.50 tsp,  vanilla extract

100 g,  desiccated coconut


  1. Preheat oven to 180 C / Gas 4.
  2. Place the flour, bicarb and salt and mix thoroughly; set aside until the dough rises to double.
  3. In a medium bowl, beat well the butter, brown sugar and caster sugar until the mixture gets smooth.
  4. Beat in the egg and vanilla until light and fluffy. Gradually blend in the flour mixture, and then mix in the coconut. Drop dough by teaspoonfuls onto an ungreased baking tray. Cookies should be about 7cm apart.
  5. Bake for 8 to 10 minutes in the preheated oven, or until lightly toasted. Cool on wire racks.
