Ingredients:

150 g,  plain flour

0.50 tsp,  bicarbonate of soda

125 g,  butter, softened

100 g,  demerara sugar

100 g,  dark brown soft sugar

1  egg, lightly beaten

1.50 tsp,  vanilla extract

0.25 tsp,  salt

125 g,  chopped dried apricots

Preparation:

  1. Preheat oven to 190 C / Gas 5. Grease a baking tray and keep it aside.
  2. In a large bowl, place the flour and bicarb and mix thoroughly.
  3. In a separate bowl, beat together the butter, demerara sugar and brown sugar until fluffy, then beat in the egg, vanilla and salt.
  4. Stir in the flour and bicarb into the butter mixture. Fold in the chocolate chips and apricots.
  5. With the help of teaspoons, drop in rounded shapes onto the baking tray.
  6. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking tray for 5 minutes before removing to a wire rack to cool completely.
