Chocolate Brownie Cookies

85 g,  best-quality cocoa powder

400 g,  caster sugar

125 ml,  vegetable oil

4  eggs

2 tsp,  vanilla extract

250 g,  plain flour

2 tsp,  baking powder

0.50 tsp,  salt

60 g,  icing sugar


  1. Preheat oven to 180 C / Gas mark 4. Line baking trays with parchment.
  2. In a medium bowl, place cocoa, caster sugar and vegetable oil and mix thoroughly. Beat in eggs one at a time, and then stir in the vanilla. Then add the flour, baking powder and salt and stir well; stir into the cocoa mixture.
  3. Cover the dough with a damp cloth and chill for at least 4 hours.
  4. After 4 hours, roll the dough into 2.5cm balls. Coat each ball in icing sugar before placing onto prepared trays.
  5. Bake in preheated oven for 10 to 12 minutes. Let stand on the baking tray for a minute before transferring to wire racks to cool.
