Custard Cake

175 g,  Unsalted butter, softened

4 tbsp,  Caster suger

2  eggs

185 g,  self- raisning flour, sifted

60 g,  custard Powder

250 ml,  milk

1 tbsp,  caster suger

1.50 tbsp,  custard powder


  1. Preheat the oven to 180 C / Gas 4.
  2. Grease one 18x28cm or similar sized glass dish with butter with cooking spray. Set aside.
  3. Custard making: In a saucepan, stir the custard powder, sugar and milk together over low heat, stir constantly to avoid lumps formation. Heat until the custard thickens enough to coat the back of a wooden spoon. Set aside.
  4. In a large mixing bowl, beat the butter and sugar and add eggs one by one, beating to mix properly. Fold in flour and custard powder, alternately with the milk.
  5. Pour 1/2 of the mixture into the prepared dish. Spoon the warm custard on top. Add the rest of the cake mixture on top, placing little mounds here and there.
  6. Bake in preheated oven for 40 minutes. Cool in dish and sprinkle icing sugar.
