Fresh ginger cookies

4 servings




275 g,  plain flour

1 tsp,  bicarbonate of soda

0.50 tsp,  salt

2 tsp,  grated root ginger

170 g,  butter, softened

200 g,  caster sugar

4 tbsp,  treacle

1  eggs

200 g,  sugar


  1. Preheat oven to 180 C / Gas 4.
  2. Meanwhile, in a large mixing bowl, place flour, bicarb and salt and mix thoroughly.
  3. In a separate bowl, beat ginger, butter and 200g sugar on medium speed. Beat until the mixture turns light and fluffy.
  4. Beat in treacle and egg. Gently fold in flour mixture until just combined. Cover a damp cloth and chill for 1 hour.
  5. Roll dough into 3cm balls and then roll them in sugar. Place 5cm apart on ungreased baking trays.
  6. Bake for about 15 minutes until edges start to brown. Centres will be slightly soft. Let stand on baking trays 1 minute and remove to wire-racks to cool completely.
