Ingredients:

200 g,  Dried Mixed Fruit

150 ml,  Warm Tea

1 tbsp,  Honey

2  Eggs

300 g,  Plain Flour

2 tsp,  Baking Powder

1 tsp,  Mixed Spice

1 tbsp,  Oil for Greasing

1  Loaf tin

Preparation:

  1. Pre-heat the oven to 200C (180C fan). Grease the baking tin with oil.
  2. In a large bowl, combine all the dried fruits and pour over the warm tea.
  3. Beat the eggs and add to the tea mixing along with the honey (depending on your taste) and mix all the ingredients together.
  4. In another separate bowl, mix the flour, baking powder and mixed spice. Once combined add this to the first bowl and mix until all of the ingredients are well combined. The mixture will be thick and sticky.
  5. Place in the pre-heated oven for 20-15 minutes, or until cooked through.
  6. Remove from oven and leave to cool slightly before removing from the tin.
