Golden Sponge Cake

Golden Sponge Cake




18.45 fl oz,  yellow cake mix

100 ml,  milk

5 tbsp,  all-purpose flour

75 g,  white sugar

0.50 tsp,  salt

35 g,  shortening

35 g,  butter, softened

1 tsp,  vanilla extract


  1. Grease and flour a 9x13 inch baking pan. Place with parchment paper at the bottom of the pan.
  2. Prepare the cake mix according to the steps directed on package. After baking, set the cake aside and let it cool completely. While the cake is cooling, you can prepare the filling.
  3. To Make the Filling: In a small saucepan combine the flour and milk without any lumps. Cook over a medium low heat, stirring constantly, until the mixture thickens and boils. Remove from heat and cool completely.
  4. In another small bowl, beat the flour and milk mixture until fluffy.
  5. At this stage, add sugar and salt and beat well. Add shortening and beat well. Add butter and beat well. Add vanilla and incorporate thoroughly. Total mixing time should be 8 to 10 minutes, beating very well at each step with each addition. This creates a light and fluffy filling.
  6. Remove cake from pan and cut lengthwise. Spread filling over layer and replace top layer.
  7. Cover with plastic wrap and refrigerate overnight. Let the cake be refrigerated at least so that the flavour will mix properly.
