Lemon Raisin Cookies

250 g,  plain flour

1 tsp,  bicarbonate of soda

0.50 tsp,  salt

225 g,  butter or margarine

2  Eggs

300 g,  caster sugar

60 ml,  lemon juice

2 tbsp,  lemon extract

80 g,  porridge oats

150 g,  raisins


  1. Preheat oven to 180 C / Gas 4. Lightly grease 2 baking trays with cooking spray.
  2. In a large bowl, place the butter, sugar, eggs, lemon juice and lemon extract and mix thoroughly until well blended.
  3. Blend in the flour, bicarbonate of soda and salt. Stir in the oats and raisins. With the help of teaspoons, drop dough in 5cm apart on to trays.
  4. Bake for 12 to 15 minutes and transfer to wire-racks to cool.
