Plum Cake

Originaly Yeild:

4 servings




3 tbsp,  dried active baking yeast

125 ml,  milk, warmed

1 tsp,  pinch of salt

450 g,  plain flour

2  Eggs

75 g,  butter

75 g,  caster sugar

200 g,  fresh ripe plums

75 g,  icing sugar

1 tsp,  pinch of cinnamon


  1. In the warm milk, mix yeast and let it dissolve. Add 1 tsp sugar so that it will dissolve smooth. Leave them for 10-20 minutes or until it turns frothy.
  2. Preheat the oven to 180 C / Gas mark 4.
  3. In a large bowl, place all the ingredients, except the plums.
  4. Add the yeast mixture and knead into a dough ball. Knead it until the size doubles.
  5. Meanwhile, deseed the plums, cut them in small pieces.
  6. Knead the dough again and place it in a baking tin. Arrange the plums on the dough such that they are peeking out a little from the dough.
  7. Bake for 30 to 45 minutes. Checking after 30 minutes to see if it is ready.
  8. Mix icing sugar with a pinch of cinnamon. Sprinkle it over the still hot plum cake right after you take it out of the oven. Serve slightly warm.
