Ingredients:

250 g,  plain flour

3 tsp,  Baking powder

2 tsp,  Bicarbonate of soda

0.25 tsp,  Salt

2 tsp,  ground cinnamon

400 g,  caster sugar

250 ml,  vegetable oil

1 tsp,  vanilla extract

500 g,  Tinned pumpkin puree

4  Eggs

125 g,  Chopped walnuts

Preparation:

  1. Preheat the oven to 180 C / Gas mark 4. Grease a baking tin of size 20x30cm and sprinkle flour.
  2. Sift together the flour, baking powder, bicarbonate of soda, salt and cinnamon. Set aside.
  3. In another large bowl, combine the sugar and oil and mix well. Blend in vanilla and pumpkin puree, then beat in eggs one at a time. Gradually add in flour mixture. Stir in nuts. Spread batter into prepared tin.
  4. Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the centre of the cake comes out clean. Allow to cool before icing or serving.
