Spice Cake

250 g,  Sifted Plain flour

0.50 tsp,  Baking Powder

0.13 tsp,  Salt

300 g,  Caster sugar

225 g,  Unsalted Butter, chilled, cut into small pieces

1.50 tsp,  Grated lime zest

1 tsp,  ground nutmeg

0.50 tsp,  ground cinnamon

0.25 tsp,  Groung Allspice

3  Eggs

125 ml,  Milk


  1. Preheat oven to 180 C / Gas 4. Grease a baking tin of size 23x13cm. Sift together the flour, baking powder and salt; set aside.
  2. In a medium sized bowl, beat together the sugar and butter. Add in the eggs one at a time and stir well, then stir in the lime zest, nutmeg, cinnamon and allspice.
  3. Add the dry ingredients alternately with the milk, stirring every time after each addition. Pour batter into the prepared tin.
  4. Bake for 75 to 90 minutes in the preheated oven, until a toothpick inserted comes out clean. Cool in the tin for 10 minutes before turning out onto a rack to cool completely.
