Ingredients:

250 g,  Plain Flour

150 g,  Caster Sugar

2 tsp,  Baking Powder

0.50 tsp,  salt

110 g,  Butter

1  egg

175 ml,  milk

1.50 tsp,  vanilla extract

4 tbsp,  Plain Flour

125 g,  caster suger

1 tsp,  ground cinnamon

50 g,  Butter

Preparation:

  1. Preheat oven to 180 C / Gas 4. Grease a baking tin of size 20x30cm with the cooking spray and spread a line of flour.
  2. To make the streusel topping: In a medium sized bowl, combine flour, sugar and cinnamon. Add butter and mix well until the mixture resembles coarse crumbs. Set aside.
  3. To make the cake: In a large bowl, combine flour, sugar, baking powder and salt and mix well. Add butter and mix well until the mixture resembles coarse crumbs. Beat an egg and milk and pour into a jug that measures 250ml, stir in vanilla. Pour into crumb mixture and mix just until moistened. Spread into prepared tin.
  4. Sprinkle with streusel topping. Bake in preheated oven for 25 to 30 minutes or until a toothpick inserted into the centre of the cake comes out clean. Allow to cool.
