Ingredients:

375 g,  Flour

50 tsp,  salt

2 tsp,  nutmeg

2 tsp,  mixed spice

185 g,  Butter, softened

155 g,  caster sugar

90 g,  currants

90 g,  sultanas

1  egg

125 ml,  milk

Preparation:

  1. Preheat oven to 220 C / Gas 7. Grease the baking tray with the cooking spray or line with parchment.
  2. In a medium-sized bowl, mix the dry ingredients thoroughly. Then add butter and mix well.
  3. Add in sugar, currants and sultanas and mix thoroughly.
  4. Add the egg and milk to the dry ingredients and beat well till turns out to a firm batter.
  5. Spoon the mixture onto greased trays. Bake for 10 to 15 minutes in preheated oven.
