Mozambican Chicken Curry

Mozambican Chicken Curry

Yeild:

Ingredients:

1 tbsp,  olive oil

1  onion, chopped

2  cloves of garlic, peeled and chopped

1  bay leaf

400 g,  Peeled plum tomatoes, drained

2 tsp,  curry powder

0.13 tsp,  salt

1500 g,  whole chicken, bones and skin removed, cut into pieces

400 ml,  coconut milk

1  lemon juice

Preparation:

  1. Heat olive oil in a large, heavy bottomed frying pan over medium heat. Stir in the onion, garlic and bay leaf, and sauté until onion is lightly browned or it turns translucent.
  2. Mix tomatoes, curry powder and salt into the frying pan, and continue cooking about 5 minutes.
  3. Mix in the chicken and cook for 15 to 20 minutes or until the chicken turns into white color.
  4. Reduce frying pan heat to low. Stirring constantly, gradually blend in the coconut milk over a period of about 5 minutes. Mix in lemon juice just before serving.
