Tomato and chilli jam

Originaly Yeild:

5 servings




500 g,  ripe tomatoes

4 medium,  cloves garlic, peeled

4 medium,  red chillies

2 tsp,  ginger, chopped

30 ml,  fish sauce

300 g,  sugar

100 ml,  red wine vinegar


  1. Put the tomatoes, garlic, chillies, ginger and fish sauce in a blender and blend till a pureƩ consistency is obtained.
  2. Pour the mixture into a pan. Add sugar and vinegar and then boil, while stiring at the same time. Skim off any scum that forms.
  3. Cool and then serve.
