Banana pancakes

Total Time:

40 minutes

Originaly Yeild:

4 servings

4  Bananas

140 ml,  Milk

3  Eggs, preferably free-range or organic

115 g,  Flour

1 tsp,  Baking powder

0.50 tsp,  salt

2 tbsp,  Butter

3 tbsp,  Caster sugar

50 ml,  crème fraîche

  1. Take only the egg whites and put into one bowl and the yolks into another.
  2. Combine the flour, baking powder and milk with the egg yolks and mix until it forms a smooth, thick batter.
  3. Now, beat the egg whites with the salt until they form stiff peaks. Fold the whites into the batter – it is now ready to use.
  4. Heat a non-stick frying pan over a moderate heat.Pour some of the batter into the pan and fry until it turns golden and firm.
  5. Loosen the pancake with a spatula and turn or flip the pancake over. Continue frying until golden.
  6. In a separate pan, melt the butter and sugar over a low heat until they form a caramel sauce – about 3 minutes.
  7. Cut the bananas lengthways, add them to the pan and cook gently until they are golden, turning after a few minutes. Cooking time may slightly differ depending on how ripe the bananas are.
  8. Serve them on the pancakes topped with a good spoonful of crème fraîche.
