Cappuccino Cream

500 g,  mascarpone

150 g,  low-fat yoghurt

1.50 tsp,  caster sugar

1 tsp,  vanilla extract

2  2 sachets instant cappuccino powder

100 ml,  whipping cream

0.50 tsp,  cocoa

50 g,  amaretti biscuits, crushed


  1. In a processor or blender, process the mascarpone, yoghurt, sugar, vanilla and cappuccino powder. Process until the ingredients turn stiff and fold into the mixture.
  2. Pour the cappuccino cream into small moulds of your choice and freeze. At least 30 minutes before serving, loosen from the mould and allow to thaw. Sprinkle with cocoa and garnish with crushed amaretti biscuits.
