500 g,  Cherries -stalked but not seeded

400 ml,  Milk

125 g,  Flour

50 g,  Caster sugar

3  Eggs

50 g,  Butter – desired quantity for greasing

0.50 tsp,  Pinch of salt


  1. Prepare a batter with the flour, caster sugar, eggs, salt and milk.
  2. In a large baking dish, apply 2-3 coating of butter; arrange the cherries on the butter packed as tightly together as possible.
  3. Bake at 180°C/fan160°C/gas 4 for about half an hour and check to see if it has set. It may need 5-10 minutes longer. Eat while still warm, dusted with extra sugar.
