Juicy strawberry savoiardi dessert

10 servings




900 ml,  fresh orange juice

300 g,  caster sugar

1.50 tbsp,  unflavoured gelatine

5 tbsp,  lemon juice

0.13 tsp,  salt

250 ml,  whipping cream

200 g,  diced fresh orange segments

350 g,  savoiardi sponge fingers

350 g,  fresh strawberries


  1. Arrange split sponge fingers in the bottom and sides of a 20cm springform tin.
  2. In a large saucepan, mix 250ml orange juice and sugar and heat the mixture until sugar is dissolved. Remove the heated mixture from flame.
  3. In a separate saucepan, soften gelatine in another 250ml orange juice then stir in hot sugared juice. Add remaining orange juice, lemon juice and salt. Chill until they are slightly thickened.
  4. Whip the cream until stiff and fold into the gelatine mixture. Fold in orange sections and spoon into the prepared tin. Chill for at least 4 hours. Remove sides of tin and place on a serving plate. Garnish with fresh strawberries.
