Peachy Pie




3 medium,  eggs

180 ml,  sugar

90 ml,  margarine

30 ml,  flour

1 ml,  cinnamon

0.50 ml,  nutmeg

5 ml,  lemon juice

820 g,  sliced peaches in heavy syrup


  1. Using pastry blender, cut shortening into flour and salt until it is the size of small peas.
  2. Add water a tablespoon (15 ml) at a time.
  3. Mix and press ingredients with a fork. Form dough into a ball and turn into a floured surface.
  4. Roll out 1/8 inch (3 mm) thick and place in a 9 inch (20 cm) pie pan.
  5. Put drained peaches into unbaked pie crust.
  6. Cream sugar, flour and margarine.
  7. Add eggs and beat well. Pour into center of pie. Bake for 1 hour 325° (160° C).
