Rice and Dates Pudding

Originaly Yeild:

4 servings




300 g,  White rice- cooked

500 ml,  Semi skimmed milk

3 tbsp,  Caster sugar

15  Dates - pitted and chopped


  1. In a food processor or blender, process the cooked rice until it is coarse; take care it should not be processed very nicely.
  2. Transfer to a saucepan, add milk slowly and keep stirring.
  3. Then add sugar and dates and mix thoroughly.
  4. Cook over low heat, stirring occasionally until the dates are tender. It may take about 20 minutes. You can serve this warm or cold.
