Indonesian Liver and Prawns

Originaly Yeild:

4 servings




300 g,  beef liver, cut into small pieces

200 g,  prawns, peeled and deveined

1.50 tin,  coconut milk

0.50 tin,  tamarind juice

1 tsp,  salt

1 tsp,  sugar

6 medium,  Chinese long beans

2 medium,  onion, thinly sliced

2 medium,  red chilli, sliced diagonally

1 tbsp,  oil

8 medium,  dried but soften chillies

6 medium,  shallots

1 medium,  stalk lemograss, coarsely chopped

2 g,  galangal

2 medium,  candlenuts

2 g,  roasted shrimp paste


  1. Put all the dried chillies,shallot, lemograss,galangal, candlenuts and roasted shrimp in a blender and grind.
  2. Heat a little oil in saucepan and fry the resulting paste until fragrant. Then add the liver and prawns and saute evenly with the paste for a few minutes.
  3. Add the coconut milk and tamarind juice to the pan and stir. Check seasoning and add salt and sugar to taste. Reduce heat and simmer until the gravy thickens. Add the long beans, sliced onions and chilli and cook until it's fairly dry.
