5  tomatoes, seeded and diced

4  garlic, minced

1  handful chopped fresh basil

100 ml,  olive oil

0.25 tsp,  salt

2 tbsp,  grated parmesan cheese

500 g,  pasta, any shape you prefer


  1. Cook pasta according to packet instructions; drain excess water and keep it aside.
  2. In a large pan, combine tomatoes, garlic, basil and olive oil.
  3. Stir in salt and cover the ingredients with cling film. Allow to settle at room temperature for at least 2 hours, or as long as 10 hours.
  4. Pour uncooked sauce over hot pasta, and toss. Add grated Parmesan cheese as a topping and serve hot.
