Artichoke and Red Pepper Pasta Salad

Ingredients:

500 g,  penne pasta

200 g,  broccoli, cut into florets

1  red pepper, julienned

175 g,  jarred marinated artichoke hearts, liquid reserved

4 tbsp,  grated Parmesan cheese

0.50 tsp,  salt and freshly ground black pepper to taste

Preparation:

  1. Cook penne pasta according to the package directions. Add broccoli and cook 2 minutes more.
  2. Drain the cooked penne pasta and broccoli and set aside for cooling.
  3. In a large bowl, mix well the pasta, broccoli, red pepper, and the artichoke hearts with their marinade, Parmesan cheese, salt and pepper. Toss, adjust seasoning and serve.
