Barbecue Chicken Pizza

4 tbsp,  Olive oil

1  red onion, sliced

6  rashers streaky bacon

1  freash pizza dough

175 ml,  barbecue sauce

2  cooked chicken breat fillets, shredded

4 tbsp,  crumbled gorgonzola cheese

2  green chillies, seeded and diced

1 tbsp,  Paprika

1 tbsp,  Chopped garlic

225 g,  Mozzarella cheese, grated


  1. Preheat an oven to 220 C / Gas 7. Grease a pizza/baking tray.
  2. Heat the oil in a frying pan over medium heat. Stir in the onion and sauté for few minutes or until the onion has softened or turned translucent. Reduce heat to low and continue cooking and stirring until the onion is very tender and dark brown, 15 to 20 minutes more.
  3. Place the bacon in a large, deep frying pan, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a kitchen towel-lined plate; crumble when cool.
  4. Press the fresh pizza dough onto the pizza/baking tray. Spread the barbecue sauce evenly over the dough and sprinkle with the shredded chicken, caramelised onion, bacon, Gorgonzola and diced chillies. Season with paprika and garlic granules. Top with the grated Mozzarella.
  5. Bake in the preheated oven until the cheese has melted and is bubbly and the pizza dough is golden brown at the bottom. You have to bake approximately 15 to 17 minutes.
