Basil Chicken with Vermicelli

4 servings




250 g,  vermicelli pasta

1 tsp,  olive oil

50 g,  small onion, finely chopped

50 g,  garlic, chopped

400 g,  2 tins chopped tomatoes

450 g,  boneless chicken breasts fillets - cooked and cubed

1  small bunch fresh basil, chopped

0.50 tsp,  salt

0.50 tsp,  dried crushed red chillies (optional)

4 tbsp,  freshly grated Parmesan


  1. Cook pasta according to the package directions. Drain the cooked pasta, and set aside for cooling.
  2. In a large frying pan, heat oil over medium heat. Sauté the onions and garlic for 2 minutes or until it turns tender.
  3. Stir in the tomatoes, chicken, basil, salt and chillies. Reduce heat to little lower than medium, and cover frying pan. Simmer for about 5 minutes, stirring frequently.
  4. Toss sauce with pasta to coat and heat through. Serve with Parmesan.
