Ingredients:

500 g,  farfalle pasta

1  large bunch fresh coriander

5  garlic, minced

1 tbsp,  white wine vinegar

50 g,  grated parmesan cheese

0.50 tsp,  cayenne pepper

50 g,  walnuts or pecans

0.25 tsp,  salt

150 ml,  olive oil

Preparation:

  1. Cook farfalle according to packet instructions; drain excess water and keep it aside.
  2. In a blender, blend coriander, garlic, vinegar, Parmesan, cayenne pepper, nuts and salt. Add 4 tablespoons of the olive oil, and blend. If needed, add more olive oil until the pesto reaches your desired consistency.
  3. Heat pesto in a small saucepan and cook over low heat, stirring constantly. Cook until the pesto reaches good consistency. Pour over cooked pasta and toss.
