Ingredients:

250 g,  Large penne pasta

3  skinless, boneless chicken breast fillets

0.25  Onion, chopped

3  mushrooms, sliced

2 tbsp,  dried italian herbs

400 g,  chopped tomatoes

0.25 tsp,  salt and pepper to taste

2 tbsp,  grated Parmesan cheese

Preparation:

  1. Cook pasta according to packet directions. Drain excess water and allow it to cool.
  2. In a large lightly greased frying pan, cook chicken for about 15 minutes over medium heat. Remove the chicken from pan, allow it to cool and dice.
  3. In the same pan over medium heat, add in the onion, mushrooms, Italian herbs, tomatoes with juice, salt and pepper; cook until onions are translucent. Remove from heat and add chicken and pasta. Garnish with Parmesan cheese on top and serve.
