Mint Pesto Linguine

4 servings




500 g,  1 linguine or spaghetti

350 g,  tomatoes, seeded and chopped

20  fresh basil leaves

10  fresh mint leaves

50 g,  garlic, chopped

2 oz,  50g pine nuts

3 tbsp,  freshly grated Parmesan cheese

2 tbsp,  ricotta cheese

1.50 tbsp,  olive oil

0.50 tsp,  salt and freshly ground black pepper to taste


  1. Cook pasta according to the package directions. Drain the cooked pasta, and set aside for cooling. Do not drain all the water; keep 1/2 tablespoons of the water for later use in the recipe.
  2. In a blender or food processor, blend the reserved water, tomatoes, basil, mint, garlic, pine nuts, Parmesan, ricotta, olive oil, salt and pepper until smooth.
  3. Toss with the cooked pasta to serve.
