Quick Vegetarian Pasta

4 servings




500 g,  1 pack whole wheat spaghetti

3 tbsp,  olive oil

200 g,  garlic, minced

150 g,  tomatoes, diced

75 g,  red onion, chopped

1  yellow pepper, chopped

1  red pepper, chopped

4 oz,  chopped courgette

2 oz,  fresh mushrooms, sliced

2 tbsp,  balsamic vinegar

100 g,  Crumbled feta cheese


  1. Cook pasta according to the package directions. Drain the cooked pasta, and set aside for cooling.
  2. Heat the oil in a frying pan over medium heat. Add the garlic and sauté for 2 minutes or until it turns lightly browned.
  3. Mix in the tomatoes, onion, yellow pepper, red pepper, courgette and mushrooms. Sauté all the vegetables for 5 minutes, cook and stir until tender.
  4. Sprinkle the balsamic vinegar into the frying pan. Toss with the cooked spaghetti, and garnish with feta cheese to serve.
