Pork cutlets with mustard glaze

Pork cutlets with mustard glaze

4 servings




800 g,  sweet potatoes

70 g,  wholegrain mustard

2 tsp,  thyme leaves

2 tbsp,  honey

250 g,  pork cutlets,

2 tbsp,  olive oil

1 medium,  Spanish onion, sliced

50 g,  shaved parmesan


  1. First, peel off the outer skin of the sweet potatoes, after which you cut them into 1cm-thick slices.
  2. Next, cook in boiling salted water for 5 minutes. Drain off the excess water and cool.
  3. Preheat oven to 200C. Combine mustard, thyme and honey in a small bowl. Season to taste with salt and pepper.
  4. Heat a large ovenproof frying pan over high heat. Brush pork cutlets with 1 tsp oil and season to taste. Add to hot pan with onion. Cook pork for 2 minutes each side or until browned. Add mustard mixture to pan. Turn pork to coat. Transfer pan to oven. Cook for 5-7 minutes or until pork is cooked through.
  5. Meanwhile, heat remaining oil in a large frying pan over medium heat. Add sweet potatoes and cook, turning, for 5 minutes or until browned. Remove from heat. Add parmesan. Season to taste and toss to combine. Divide sweet potato among plates. Top with pork cutlets. Spoon over mustard glaze and onion. Serve.
