Ingredients:

1300 g,  Prime Fresh british pork roasting joint

4 tbsp,  Dijon mustard

2 tbsp,  Finely chopped fresh rosemary

1  juice of lemon

4 tbsp,  runny honey

1 tbsp,  soy sauce

Preparation:

  1. Preheat the oven to 190 C / fan 170 C / gas 5.
  2. Wipe the pork and place into a roasting tin. In a mixing bowl mix all the remaining ingredients together and spread half over the joint.
  3. After 1 hour 20 minutes baste the joint with the remaining ingredients and continue to cook. Take the joint out of the oven and leave to rest for 10 minutes before carving. Serve with seasonal vegetables and garnish with sprigs of rosemary and lemon wedges.
