Brown Rice Porridge

Ingredients:

200 g,  cooked brown rice

250 ml,  semi-skimmed milk

2 tbsp,  dried blueberries

15 g,  cinnamon

1 tbsp,  honey

1  egg

0.25 tbsp,  vanilla extract

15 g,  unsalted butter

Preparation:

  1. In a small saucepan, place the cooked brown rice, milk, blueberries, cinnamon and honey. Bring the mixture to boil, then reduce the heat to low and cook on a low flame for 20 minutes.
  2. In a small bowl, beat the egg thoroughly.
  3. Temper the egg by whisking in some of the hot rice, a tablespoon at a time until you have incorporated about 6 tablespoons.
  4. Stir the egg into the rice along with the vanilla and butter and continue cooking over low heat for 1 to 2 minutes and allow it to thicken.
