Deep Fried Prawn and Rice Croquettes

Deep Fried Prawn and Rice Croquettes

4 servings




300 g,  cooked rice

2 tbsp,  butter

25 g,  onion, finely chopped

100 g,  peeled shrimp, chopped

2 tbsp,  flour

1 tbsp,  white wine

150 ml,  milk

1 tsp,  pinch salt and pepper

2 tbsp,  grated Parmesan cheese

25 g,  fresh dill

1 tsp,  flour for dusting

1  egg, beaten

60 g,  breadcrumbs

1 tsp,  oil for frying


  1. Heat oil in a frying pan over medium heat, then fry onions until they are soften and brown. Now add prawns, stir until completely cooked.
  2. Now add flour, white wine and add milk slowly constantly stirring to create white sauce.
  3. Remove from the heat and add rice to the white sauce. Stir well until rice and white sauce are evenly mixed.
  4. Ensure that the rice is evenly coated with white sauce; otherwise, at this point gradually stir in a little bit more milk until it seems to be enough.
  5. Stir in 1 tsp salt, a pinch of black pepper, parmesan cheese, chopped dill and stir well. Set aside to cool.
  6. Heat oil in deep frying pan.
  7. Divide rice mixture into small balls. Roll each rice ball in flour, then beaten egg, then breadcrumbs.
  8. Deep fry rice balls in batches in hot oil until golden brown and serve hot.
