Rice with Spinach

Ingredients:

150 g,  uncooked basmati rice

100 ml,  water

10.75 fl oz,  condensed cream of chicken soup, undiluted

100 ml,  milk

2  fresh jalapeno peppers, seeded and chopped

0.50 tsp,  salt

0.25 tsp,  ground black pepper

2 tbsp,  butter

75 g,  chopped onion

10 fl oz,  frozen chopped spinach, thawed and drained

4 fl oz,  processed cheese food, cubed

Preparation:

  1. In a medium sized pan, add water and bring it to boil. Then add the basmati rice and bring it to boil.
  2. Cook the rice on low flame till it turns tender; ensure that the water has been absorbed. This may take 40 to 50 minutes. Set aside to cool.
  3. Preheat oven to 350 degrees F (175 degrees C). Lightly spray a medium baking dish with oil.
  4. In a bowl, place the soup, milk, jalapeno peppers, salt, and pepper. Keep the mixture aside.
  5. In a large-sized skillet, melt the butter over low flame. Add onion and sauté it until it turns soft and tender.
  6. Mix in the cooked rice and spinach. Pour the soup mixture into the skillet, and continue cooking by constantly stirring.
  7. Now add the cubed processed cheese, and transfer to the prepared baking dish.
  8. Bake for about 25 minutes in the preheated oven, until the mixture turns bubbly and lightly browned.
