Seafood Risotto

Seafood Risotto




500 g,  Bag of mixed seafood, e.g. prawns, mussels and squid

2 tbsp,  Olive oil

900 ml,  Fish stock

50 g,  Butter

2  Shallots, chopped

2  Garlic clove, chopped

350 g,  Arborio rice

120 ml,  Dry white wine

25 g,  Grated parmesan


  1. Melt the butter in a large pan and sweat the shallots and garlic until soft
  2. Add the rice and stir for a couple of minutes to coat with the butter
  3. Add the wine, stir and then remove from the heat and let it all absorb
  4. Return to the heat and add the stock one ladle at at time making sure it is all absorbed before adding the next ladle
  5. Cook until the rice is al dente and then add the parmesan
  6. Add the seafood to the rice, stir through and serve
