Veggie Fried Rice

Originaly Yeild:

4 servings




750 ml,  water

150 g,  easy cook brown rice

2 tbsp,  groundnut or sesame oil

1  small onion, chopped

1  small green pepper, chopped

1 tsp,  garlic, minced

0.25 tsp,  crushed chilli flakes

3  spring onions, thinly sliced

3 tbsp,  soy sauce

1  frozen or fresh garden peas

2 tbsp,  chopped peanuts


  1. In a saucepan bring water to a boil. Stir in rice. Reduce heat, cover and simmer for 20 minutes.
  2. Meanwhile, heat oil in a large frying pan or wok over medium heat. Add onions, green pepper, garlic and chilli flakes, to taste. Cook 3 minutes, stirring occasionally.
  3. Increase heat to medium-high and stir in cooked rice, spring onions and soy sauce. Stir-fry for 1 minute. Add peas and cook 1 minute more. Remove from heat. Add sesame oil and mix well. Garnish with peanuts, if desired.
