Chicken Salad with herbs

120 g,  Light mayonnaise

2 tbsp,  Cider vinegar

10 g,  Garlic- crushed

2 tbsp,  Fresh Dill chopped

450 g,  Boneless and skinless Chicken breast pieces- chopped and cooked

10 g,  Red pepper

30 g,  Crumbled feta cheese


  1. In a medium sized bowl, mix well mayonnaise, vinegar, garlic and dill. Refrigerate for overnight so that the flavours of the ingredients melt and mix well.
  2. Stir together chicken, red pepper and feta and blend with the chilled mayonnaise.
  3. You can serve this delicious salad as a sandwich filling or over a bed of crisp green salad.
