Chicken Salad




250 g,  Boneless and skinless Chicken breast pieces – cooked and chopped

150 g,  Spring onions –chopped

1 tbsp,  Sesame seeds -toasted

1 tbsp,  Dark brown sugar

1 tbsp,  Soya sauce

1 tbsp,  Sesame oil

4 tbsp,  Vegetable oil

3 tbsp,  Rice vinegar

225 g,  Dried rice noodles

150 g,  Romaine lettuce – 1 head, rinsed, dried and chopped


  1. Take a small jar with a tight fitting lid; prepare the dressing by combining the brown sugar, soya sauce, sesame oil, vegetable oil and rice vinegar. Shake well and keep it aside for 30 minutes.
  2. In a frying pan over medium flame, heat a few tablespoons of oil and break off bits of the noodles and fry them. Add only few at a time since they will puff up in the pan. As they begin to puff up, remove and drain them on kitchen roll.
  3. In another large bowl, combine the lettuce, chicken, spring onions and sesame seeds. Leave the mixture in the fridge and allow it to chill about 10 minutes.
  4. Just before serving add the cooked rice noodles and toss with desired amount of dressing. Serve immediately in large bowls.
