Ingredients:

75 g,  Medium sized cucumber – cut into small cubes

3 tbsp,  Mint leaves – handful if fresh or 3 tablespoons if dried

10 ml,  Plain soya yoghurt

Preparation:

  1. Mix in the mint and yoghurt with the cut cucumber and serve.
  2. If you use dried mint, mix it into the yoghurt half an hour beforehand to reconstitute it.
