Orange and fennel salad

Yeild:

servings 

Ingredients:

4  oranges, peeled, deseeded

8  black olives, sliced

1  large fennel bulb, thin sliced

1.50 oz,  fillets

4 tbsp,  olive oil

2 tsp,  red wine vinegar

0.25 tsp,  salt and black pepper powder

Preparation:

  1. Segment the orange pieces by cutting it from the membranes side until the seeded portion of it. Remove all the seeds and pith attached to it.
  2. In a large bowl, place the orange segments and sliced olives, then add the fennel and anchovies. Sprinkle salt and pepper over the ingredients.
  3. Mix in the olive oil and vinegar, marinate for about 10 minutes. Decorate with the green fresh leaves from the fennel and then serve.
