Orzo Salad

250 g,  orzo pasta

198 g,  sweetcorn kernels, drained

0.25  small red onion, thinly sliced

0.25  green pepper, thinly sliced

0.50  red hot chilli, thinly sliced

250 g,  flat-leafed parsley, chopped

8  black olives, thinly sliced

125 ml,  balsamic vinaigrette

0.25 tsp,  garlic granules

125 g,  flaked almonds


  1. Cook the orzo pasta as per instructions given in the packet. Drain it and keep it aside.
  2. Put orzo in bowl. Add onion, chilli, pepper and dressing, whilst pasta is still hot.
  3. Keep it in refrigerator and allow it to cool for 1 hour.
  4. Add remaining ingredients, toss and serve.
