Pistachio Chicken salad

Ingredients:

3 tbsp,  Asian sesame oil

3 tbsp,  grated fresh ginger

1 tbsp,  lemon juice

1 tbsp,  honey

2 tsp,  minced garlic

1 tsp,  paprika

4  boneless, skinless chicken breast

1  shelled California pistachios, chopped

2 tbsp,  cornmeal

1  egg, beaten

Preparation:

  1. In a large bowl, mix sesame oil, ginger, lemon juice, honey, garlic and paprika; toss with chicken.
  2. Cover the mixture and marinate in refrigerator for 10-12 hours.
  3. Mix chopped pistachios and cornmeal. Dip marinated chicken pieces first in egg, then in pistachio mixture, pressing the nuts on.
  4. Place in baking pan; bake at 350° F for 40 minutes or until done.
